Bobbys Favorite Beef Teriyaki Stir-fry with Broccoli and Peppers

  1. In a medium bowl, combine the beef and 1/4 cup of the teriyaki sauce.
  2. Cover and let marinate for at least 20 minutes and up to 4 hours.
  3. In a small bowl, combine the remaining 1/4 cup teriyaki sauce and the cornstarch and stir until smooth.
  4. Bring a medium pot of salted water to a boil.
  5. Cook the broccoli for 20 seconds.
  6. Drain and run the broccoli under cold water to stop the cooking.
  7. Drain well.
  8. Heat 1 tablespoon of the vegetable oil in a large skillet over high heat, until a drop of water placed in the skillet sizzles.
  9. Remove the beef from the marinade and add it to the pan.
  10. Cook, stirring, for 1 to 2 minutes, or until the beef is no longer pink.
  11. Transfer the beef to a plate.
  12. Wipe out the skillet and add the remaining 1 tablespoon vegetable oil.
  13. Add the red bell pepper, ginger, scallions, and broccoli and cook, stirring, for 1 minute.
  14. Add the cornstarch mixture to the pan and cook, stirring, for 2 minutes, or until it begins to thicken.
  15. Return the beef, with any accumulated juices, to the pan and cook, stirring, for 1 minute more, or until the sauce is thickened and the beef is heated through.
  16. Serve hot with the white rice.
