Bobbys Favorite Beef Teriyaki Stir-fry with Broccoli and Peppers
- 1 pound boneless beef round, cut across the grain into 1/2-inch-thick strips
- 1/2 cup bottled teriyaki sauce
- 1 tablespoon cornstarch
- 1 pound broccoli, cut into florets
- 2 tablespoons vegetable oil
- 1 large red bell pepper, seeded and cut into strips
- 2 teaspoons peeled and chopped fresh ginger
- 4 scallions (white and light green parts), cut into 1-inch pieces
- Cooked white rice, for serving
- In a medium bowl, combine the beef and 1/4 cup of the teriyaki sauce.
- Cover and let marinate for at least 20 minutes and up to 4 hours.
- In a small bowl, combine the remaining 1/4 cup teriyaki sauce and the cornstarch and stir until smooth.
- Bring a medium pot of salted water to a boil.
- Cook the broccoli for 20 seconds.
- Drain and run the broccoli under cold water to stop the cooking.
- Drain well.
- Heat 1 tablespoon of the vegetable oil in a large skillet over high heat, until a drop of water placed in the skillet sizzles.
- Remove the beef from the marinade and add it to the pan.
- Cook, stirring, for 1 to 2 minutes, or until the beef is no longer pink.
- Transfer the beef to a plate.
- Wipe out the skillet and add the remaining 1 tablespoon vegetable oil.
- Add the red bell pepper, ginger, scallions, and broccoli and cook, stirring, for 1 minute.
- Add the cornstarch mixture to the pan and cook, stirring, for 2 minutes, or until it begins to thicken.
- Return the beef, with any accumulated juices, to the pan and cook, stirring, for 1 minute more, or until the sauce is thickened and the beef is heated through.
- Serve hot with the white rice.
