Pear Medley Marmalade

  1. MEASURE prepared fruit into a large saucepan.
  2. STIR fruit pectin crystals into fruit and mix well.
  3. PLACE saucepan over high heat and stir until mixture comes to a full boil.
  4. STIR in sugar.
  5. Continue to cook and stir over high heat until mixture comes to a full rolling boil.
  6. Boil hard 1 minute, stirring constantly.
  7. Remove from heat.
  8. STIR and skim foam for 5 minutes to prevent floating fruit.
  9. POUR quickly into warm, sterilized jars filling up to 1/4-inch from rim.
  10. SEAL while hot with sterilized 2-piece lids with new centres.
