Rotini Stir-Fry
- 1/2 (1 lb.) pkg. rotini (uncooked)
- 2 Tbsp. vegetable oil
- 2 chicken breasts, cut into strips (about 12 oz.)
- 1 c. frozen broccoli
- 1 c. carrots
- 1/2 c. diced onion
- 1/4 c. water
- 1/2 tsp. chicken-flavored instant bouillon (low sodium)
- 1/2 tsp. tarragon leaves
- 2 Tbsp. grated Parmesan cheese
- Prepare rotini per package directions and drain.
- In a large skillet, heat oil and add chicken, broccoli, carrots and onion. Cook and stir over medium heat until the broccoli is tender (crisp).
- Add water, bouillon and tarragon, cook and stir until the chicken is cooked through.
- Add hot cooked rotini and Parmesan cheese.
- Toss to coat.
- Serve immediately.
- Makes 8 servings. Contains per serving: 225 calories; 6 grams fat; 123 mg. sodium and 37 mg. cholesterol.
