My Saganaki

  1. Rinse cheese under cold water.
  2. While wet, dredge in flour to coat.
  3. Heat oil in a large skillet until very hot.
  4. Add cheese.
  5. Cook 1 minute each side.
  6. Add Ouzo.
  7. Ignite.
  8. When flame subsides, tranfer to plates.
  9. Top with oregano.
  10. Serve with lemon, olives, tomatoes and pita.
