Sausage and Greens

  1. Cook pasta according to pasta directions, drain.
  2. While pasta is cooking, in a large skillet or dutch oven over medium heat brown sausage (5 minutes); remove sausage from pan.
  3. Add onion and bell pepper to pan and cook until soft, stirring occassionally (5-10 minutes).
  4. Return sausage to pan.
  5. Place greens over top of sausage in pan.
  6. Cover.
  7. Steam for 5 minutes or until greens are wilted.
  8. Add broth to pan.
  9. Cook until warm (3 minutes).
  10. Add salt (if desired) and pepper to taste.
  11. Place pasta in bowl and top with sausage and greens mixture.
  12. Sprinkle with grated cheese, if desired.
