Gluten Free Apple Muffins

  1. Preheat oven to 375F (190C).
  2. Mix dry ingredients.
  3. Mix liquids and stir into dry mix.
  4. Let sit a few minutes to thicken.
  5. Fill oiled muffin tins 23 full.
  6. Bake at 350F (180C).
  7. for 30 minutes or until done.
  8. VARIATION: A beaten egg may be added to the batter if fluffier muffins are desired.
