Gluten Free Apple Muffins
- 1/2 cup garbanzo flour
- 1 cup oatmeal instant
- 1/2 teaspoon sea salt (optional)
- 1 1/2 teaspoons baking powder
- 3/4 cup water
- 1/4 cup vegetable oil
- 2 tablespoons honey
- 1 medium apples grated
- 1/2 cup raisins, seedless (optional)
- Preheat oven to 375F (190C).
- Mix dry ingredients.
- Mix liquids and stir into dry mix.
- Let sit a few minutes to thicken.
- Fill oiled muffin tins 23 full.
- Bake at 350F (180C).
- for 30 minutes or until done.
- VARIATION: A beaten egg may be added to the batter if fluffier muffins are desired.
