Bangin Mango Basil Chicken
- 1 Tablespoon Canola Oil
- 4 whole Chicken Breasts, Skin And Fat Removed
- 1 whole Small Red Onion, Thinly Sliced
- 1/2 cups Mango Juice
- 1/2 teaspoons Ground Cumin
- 1 teaspoon Dried Basil
- 1/2 teaspoons Salt
- 1/2 whole Lime
- 1/4 cups Fresh Basil
- 2 cups Jasmine Rice Cooked
- 1 whole Mango, Sliced
- Start by heating the oil in a large frying pan.
- Add the chicken breasts and cook until golden brown, about 3-4 minutes on each side.
- Sprinkle the onion over top of the chicken breasts and pour in the mango juice.
- Mix well, letting the juice come to a boil.
- Reduce heat to medium-low.
- Sprinkle the cumin, basil, and salt over the top and stir well.
- Cover the pan and let the chicken cook about 4-6 minutes on each side.
- When chicken is done, squeeze the lime over the top and remove to dinner plates, leaving the sauce and onions in the pan.
- Increase heat to high and let sauce thicken while stirring constantly, about 2 minutes.
- Stir in fresh basil and drizzle sauce over top each chicken breast.
- Serve with jasmine rice and slices of fresh mango.
