Chow Chow Relish

  1. Combine chopped vegetables.
  2. Sprinkle with salt; let stand 4 to 6 hours in a cool place.
  3. Drain well.
  4. Combine vinegar, sugar and spices; simmer 10 minutes.
  5. Add vegetables; simmer 10 more minutes.
  6. Bring to a boil.
  7. Pack boiling hot in sterilized jars, leaving 1/8-inch at top.
