Maine Lobster Roll

  1. Boil lobsters and cool.
  2. Remove meat and cube or tear up to 1/2 " size.
  3. clean and drain cucumber or celery and add to lobster meat along with mayonnaise and tarragon and mix well.
  4. Add scallions and season to taste with salt and pepper.
  5. chill for 2 hours.
  6. butter hot dug buns and toast in pan or broiler.
  7. Stuff with chilled salad and serve.
