Simple Ropa Vieja in the Crockpot
- 2 lbs flank steaks (one big flap)
- 1 pinch salt and pepper
- 1 onion, chopped
- 1 bell pepper, chopped (any color)
- 1 bay leaf
- 12 teaspoon cumin
- 2 tablespoons sofrito sauce
- 1 ounce Goya sazon tropical
- 8 ounces tomato sauce
- Season flank steak with salt and pepper and sear/brown on both siides.
- Place in crockpot.
- Add remaining ingredients (except onion and bell pepper) and cook on LOW for 4 hours or HIGH for 2 hours.
- Saute onion and bell pepper until translucent.
- Add to crockpot.
- Cook for another 4 hours on LOW or another 2 hours on HIGH.
- Ropa vieja is done when you can shred it easily with two forks.
- Serve over yellow rice, with or without fried plantains.
