Simple Ropa Vieja in the Crockpot

  1. Season flank steak with salt and pepper and sear/brown on both siides.
  2. Place in crockpot.
  3. Add remaining ingredients (except onion and bell pepper) and cook on LOW for 4 hours or HIGH for 2 hours.
  4. Saute onion and bell pepper until translucent.
  5. Add to crockpot.
  6. Cook for another 4 hours on LOW or another 2 hours on HIGH.
  7. Ropa vieja is done when you can shred it easily with two forks.
  8. Serve over yellow rice, with or without fried plantains.
