Holiday Mashed Potatoes Recipe
- 3 pound (about 12 med.) potatoes, peeled, cooked and warm
- 1 (8 ounce.) pkg. cream cheese at room temperature
- 1/4 c. butter
- 1/2 c. commercial lowfat sour cream
- 1/2 c. lowfat milk
- 2 Large eggs, lightly beaten
- 1/4 c. finely minced onions (optional)
- 1 teaspoon iodized salt
- Dash of pepper (optional)
- In large mixing bowl (or possibly by hand) mash warm potatoes.
- When all lumps are removed, add in cream cheese in small pcs, then the butter.
- Beat well till cheese and butter are both melted and completely mixed.
- Fold in lowfat sour cream.
