Hearty Beef Vegetable Soup Recipe

  1. Place meat and water in large pot.
  2. Bring to boil and cook, uncovered for 5 min.
  3. Add in stock, vegetables, garlic, parsley and bay leaf.
  4. Bring to simmering, cover and simmer 1 hour.
  5. Add in remaining ingredients, cover and simmer for 30 more min.
  6. Stir and let stand uncovered for 10 min before serving.
  7. Makes 6 servings.
  8. Each serving equals approximately 125 calories.
