Hearty Beef Vegetable Soup Recipe
- 1/2 pound lean beef
- 2 c. water
- 1 1/2 tbsp. wine vinegar
- 2 c. chicken stock
- 1/2 stalk celery, chopped
- 1 sm. onion, chopped
- 1 sm. green pepper, seeded & cubed
- 1/4 c. yellow turnip, peeled & diced
- 1 tbsp. fresh parsley
- 1 bay leaf
- 1/2 c. spaghetti noodles, broken
- 1 c. canned salt free tomatoes
- 2 teaspoon salt free tomato paste
- 1/2 teaspoon dry thyme
- Place meat and water in large pot.
- Bring to boil and cook, uncovered for 5 min.
- Add in stock, vegetables, garlic, parsley and bay leaf.
- Bring to simmering, cover and simmer 1 hour.
- Add in remaining ingredients, cover and simmer for 30 more min.
- Stir and let stand uncovered for 10 min before serving.
- Makes 6 servings.
- Each serving equals approximately 125 calories.
