Lighter Pumpkin Chocolate Chip Cookies
- 1 cup Smart Balance butter spread
- 12 cup brown sugar, packed
- 12 cup granulated sugar
- 14 cup egg substitute
- 1 teaspoon vanilla extract
- 1 cup flour
- 1 cup whole wheat flour
- 1 cup oatmeal
- 1 teaspoon baking soda
- 12 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup pumpkin
- 34 cup mini chocolate chip
- In a mixing bowl cream together butter and sugars.
- Add egg and vanilla, beat to mix.
- In another bowl mix flours, oatmeal, soda, salt, and cinnamon.
- Add flour mixture to sugar mixture slowly, alternating with adding pumpkin.
- Mix well.
- Fold in chocolate chips.
- Drop by tablespoonfuls onto greased cookie sheet.
- Bake at 350 for 12-13 minutes or until lightly browned.
