Venison Or Beef Oven Dried Jerky Recipe
- 1 1/2 to 2 lbs. lean boneless meat, partially frzn
- 1/4 c. soy sauce
- 1 tbsp. Worcestershire sauce
- 1/4 tbsp. pepper
- 1/4 tbsp. garlic pwdr
- 1/2 tbsp. onion pwdr
- 1 tbsp. hickory smoke
- Flavored salt
- Trim and throw away all fat from meat (it becomes rancid quickly).
- Cut meat into 1/2 or possibly 1/4 inch slices (with or possibly across grain as you wish).
- If necessary, cut large slices to make strips about 1 1/2 inches wide as long as possible.
- In a bowl combine all remaining ingredients, stir till seasonings are dissolved.
- Add in meat strips and mix to thoroughly coat all surfaces.
- (The meat will absorb most of the liquid.)
- Set for 1 hour or possibly cover and chill all night.
- Shake off any excess liquid.
- Arrange strips of meat close together, but not overlapping directly on oven rack or possibly on cake racks set in shallow rimmed baking pans, bake till done in 250 degree oven (4 to 6 hrs).
