Mini Peach Bread Pudding
- 14 cup sugar
- 3 12 cups milk
- 4 eggs
- 14 teaspoon vanilla
- 4 12 cups diced bread
- 1 cup diced peach
- hot water
- In a bowl, whisk together sugar, milk, eggs and vanilla until smooth.
- Fold in bread and peaches and mix well.
- Cover and refrigerate for 1 hour.
- Preheat oven to 300.
- Spoon bread mixture into ramekins.
- Place ramekins in roasting pan and pour hot water to come a quarter of the way up the sides.
- Bake for 50 minutes or until toothpick inserted in the center comes out clean.
