Mini Peach Bread Pudding

  1. In a bowl, whisk together sugar, milk, eggs and vanilla until smooth.
  2. Fold in bread and peaches and mix well.
  3. Cover and refrigerate for 1 hour.
  4. Preheat oven to 300.
  5. Spoon bread mixture into ramekins.
  6. Place ramekins in roasting pan and pour hot water to come a quarter of the way up the sides.
  7. Bake for 50 minutes or until toothpick inserted in the center comes out clean.
