Italian Green Beans(Microwave)
- 4 cloves garlic, smashed, peeled and chopped
- 2 tsp. olive oil
- 1/2 tsp. thyme
- 1/4 tsp. dried oregano
- 14 oz. can Italian plum tomatoes, drained
- 1 lb. green beans, tipped and tailed
- freshly ground black pepper to taste
- 1 1/2 tsp. fresh lemon juice
- Place garlic and oil in a 13 x 10 x 2-inch dish.
- Cook, uncovered, at 100% for about 1 minute.
- Remove from oven.
- Stir in thyme, oregano and tomatoes.
- Cook, uncovered, for 2 minutes. Remove from oven and stir in green beans and black pepper.
- Cover tightly with microwave plastic wrap.
- Cook for 7 minutes. Carefully prick plastic to release steam (be very careful of steam that will escape).
- Uncover and stir in lemon juice.
- Serves 4 (76 calories per serving).
