White Beans And Roasted Garlic Spread
- 1 head (about 12 cloves) garlic, separated, but not peeled
- 2 (19 oz. each) cans white beans, rinsed and drained
- 1/4 c. lemon juice
- 1 Tbsp. olive oil
- 2 Tbsp. minced fresh parsley
- 1/4 tsp. ground black pepper
- 1/4 c. minced red onions
- 1/4 c. minced green pepper
- Place the garlic in a custard cup.
- Bake at 400u0b0 for 15 minutes or until soft when tested with the tip of a knife.
- Do not allow the garlic to brown.
- Let cool slightly, then slip off the skins and trim off the hard stem ends.
- Place half of the beans, plus the lemon juice, oil and garlic in a food processor.
- Puree until smooth.
- Transfer to a medium bowl.
- Stir in the parsley, black pepper, half of the onions, half of the green peppers and the remaining beans.
- Roughly mash the whole beans with fork.
