Deep South Dirty Rice Recipe
- 1 c. rice
- 1 pound grnd beef
- 1 pound grnd chicken livers
- 1 c. minced onions
- 1/2 c. minced green peppers
- 1/2 c. celery, diced
- 1 clove garlic, minced
- Salt, pepper & warm sauce to taste
- Healthy pinch of thyme
- Sweet basil
- 1 bunch green onion tops (minced fine)
- 1 tbsp. chopped parsley
- Cook rice separately, rinse and set aside.
- Boil chicken livers, grind or possibly chop very fine.
- Saute/fry grnd meat till lightly brown, drain excess fat.
- Add in onion, peppers, celery and garlic till tender.
- In a large casserole dish mix all ingredients well using broth of chicken livers in mix.
- Chill till ready to use.
- To serve, heat in dish with foil or possibly casserole lid on top.
