Stuffed Cherry Tomatoes

  1. Place tomatoes, stem-side down, on cutting board.
  2. Cut thin slice from the top of each tomato.
  3. Using a small spoon, scoop out tomato pulp;discard.
  4. Invert tomatoes on paper towels; drain thoroughly.
  5. In small bowl, combine bacon, onion and mayonnaise; spoon into tomatoes.
  6. Cover and chill about 2 hours.
  7. Garnish with parsley, if desired.
