Apricot Cookies
- 2-1/2 cup all-purpose flour, sifted
- 1/2 cup sugar
- 1 tbsp. baking powder
- 1/2 tsp. salt
- 1 cup margarine
- 2 pkg. (3 oz. each) cream cheese
- 1/2 cup coconut
- 1 cup apricot preserves
- 2 cups confectioners' sugar
- 1/2 cup apricot preserves
- 2 tbsp. butter, softened
- Sift dry ingredients.
- Add everything but coconut and apricots.
- Mix until smooth (will be dry and flakey).
- Add coconut and apricot preserves.
- Drop by tsp.
- on ungreased sheets.
- Bake at 350F for 15-18 minutes.
- Should not brown.
- Frosting: Beat until smooth and ice cooled cookies.
