Zucchini Bread
- 3 c. flour, sifted plus 1 tsp. for dusting pan
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1/4 tsp. allspice
- 6 egg whites or 3/4 c. egg substitute
- 1 1/2 c. sugar
- 3/4 c. vegetable oil
- 1 1/2 tsp. vanilla extract
- 2 c. lightly packed, coarsely grated zucchini, washed, ends removed and not peeled
- 1 c. raisins
- nonstick vegetable spray
- Preheat oven to 350u0b0.
- Sift 3 cups flour, baking powder, baking soda, salt, cinnamon, nutmeg and allspice together in a medium-sized bowl.
- In a separate bowl, beat the egg whites or egg substitute with the sugar, oil and vanilla.
- Stir zucchini and raisins into egg mixture.
- By hand, stir in the flour mixture just until flour is blended.
- Spray two 8 x 4-inch loaf pans with nonstick spray.
- Bake until done.
