Spicy Duck Salad

  1. Hull tomatoes and cut in half.
  2. Place in large shallow salad bowl.
  3. Dice the onions, red pepper and cucumbers and place in the bowl.
  4. Fold in the jalapeno pepper.
  5. Peel, pit and dice avocado.
  6. Mix with lime juice.
  7. Add to bowl with vegetables.
  8. Add beans.
  9. Fold in the chili powder and olive oil.
  10. Remove the fat from the duck breasts and slice them thin at an angle.
  11. Cut each slice in four pieces.
  12. Fold the duck into the salad mixture.
  13. Fold in the coriander and season to taste with salt and pepper flakes.
