Apricot Swirl Cheesecake Recipe
- 1/3 c. (2/3 stick) butter
- 1 1/2 c. graham cracker crumbs
- 1 x 8-oz package cream cheese, softened
- 1/3 c. lowfat sour cream
- 2 x Large eggs
- 1/3 c. sugar
- 2 tsp grated lemon rind
- 1/4 c. lemon juice
- 1 x 16-oz can apricot halves, liquid removed
- 2 x passion fruit
- 1 1/4 c. whipping cream, whipped
- Heat butter in dish on high 1 minute; add in crumbs, press over base and side of 7-inch pie plate.
- Cook on high 1 minute, cold.
- Pour Filling into crumb crust, drizzle with apricot mix, swirl through gently with knife.
- Cook on medium high 5 min, let stand 3 min, cook on medium high 5 min, cold, chill till hard.
- Decorate with cream, apricots, and half the passion fruit.
- Filling: Beat cream cheese and lowfat sour cream till smooth.
- Add in Large eggs, sugar, lemon rind, and juice, beat well.
- Blend or possibly process apricots, reserving some slices for garnish, till smooth.
- Stir in half the passion fruit.
