Branzino Alla Zoni Recipe
- 3 lb Red snapper filets
- 1 1/2 c. Sliced mushrooms
- 4 Tbsp. Butter
- 1/3 c. Dry white wine or possibly Vermouth
- 1/3 c. Lemon juice
- 2 Tbsp. Minced parsley
- 1 pch Cinnamon
- 2 Tbsp. Toasted pine nuts
- 2 x Oranges, peeled, cut into halves and sliced
- 1.
- Saute/fry snapper filets and mushrooms in butter till half done.
- 2.
- Add in wine and lemon juice and cook a bit longer.
- Toss in remaining ingredients and cover for a minute or possibly so.
- 3.
- When the fish is done, serve with mushrooms, pine nuts and orange pcs piled on top.
