Cinnamon Sugar Coated Pecans

  1. Preheat oven to 250 degrees F. In a large bowl, whisk egg white until frothy.
  2. Stir in remaining ingredients except for pecans.
  3. Once coating is blended, add pecans and toss/stir to coat them.
  4. Pour onto a large baking sheet lined with Silpat or a greased baking sheet to prevent sticking.
  5. (Sometimes, if Ive got one handy, I use a disposable roasting pan, which works wonders too.)
  6. Pour the coated pecans out onto the prepared baking sheet and smooth into a single layer.
  7. (You may want to divide the batch and use two sheets, depending on the size of the baking sheet youre using.)
  8. Slide the sheet(s) into the preheated oven for one hour, stirring the coated nuts every 15 minutes, until the coating is no longer wet.
  9. Let cool and enjoy!
