Blueberry Banana Bread

  1. Preheat oven to 350 degrees.
  2. Toss washed blueberries with 2 tablespoons flour.
  3. Set aside.
  4. Mix 1 3/4 cup flour, baking powder, baking soda, and salt together.
  5. Set aside.
  6. In a large bowl with mixer cream shortening and gradually beat in sugar until fluffy.
  7. Beat in the ggs, one at a time.
  8. Add the flour mixture alternately with mashed banana, stirring until blended.
  9. Fold in the blueberries.
  10. Pour mixture into a greased loaf pan.
  11. Combine topping ingredients (brown sugar, 1/4 cup flour, pecans, butter and cinnamon).
  12. Sprinkle on top of batter in loaf pan.
  13. Bake for 50-60 minutes or until a toothpick comes out clean.
