Beth's Jello Salad Recipe
- 2 c. apple cider or possibly juice
- 6 ounce. cherry or possibly raspberry Jello (raspberry preferred)
- 16 ounce. pitted dark sweet cherries
- 1/2 c. thinly sliced celery
- 1/2 c. minced walnuts
- 3 ounce. soft cream cheese
- 1 c. applesauce
- Bring cider to boil, dissolve Jello in cider; set aside.
- Drain cherries, save syrup.
- Cut cherries in half; set aside.
- Add in sufficient water to syrup to make 1 1/2 c., stir into Jello.
- Take 2 c. of above and set aside.
- Refrigeraterest till partially set.
- To partially set Jello add in celery, nuts and cherries.
- Put into 6 1/2 c. mold, refrigeratetill almost hard.
- With Jello which has been set aside add in cream cheese.
- Stir till fluid, add in applesauce.
- Put into mold.
- Refrigeratetill set.
- Line with lettuce.
