Fish Loaf

• 1 c. heavy cream
• few drops of juice from scraped onion
• dash of salt
• 1 to 2 tsp. grated horseradish
• 1 c. cold, flaked salmon
• 2 Tbsp. butter
• 1/2 Tbsp. flour
• 1/2 c. milk
• lemon juice

• cayenne to taste
• leftover creamed peas
• dry crumbs
• beaten egg
• 6 c. zucchini, sliced
• 1/2 c. chopped onion
• 1 can cream of chicken soup
• 1 c. sour cream
• 1 c. shredded carrots
• 2 c. cooked chicken, cubed
• 4 c. herb-seasoned stuffing
• 1/2 c. melted butter
• 1/2 c. toasted, slivered almonds
• 1/2 c. Miracle Whip
• 1 c. sliced celery
• 2 Tbsp. chopped pimiento
• 1/2 c. sliced water chestnuts
• 1 hare, skinned and cleaned
• 1 bunch sweet herbs
• 2 onions
• 6 whole cloves
• 6 whole allspice
• 1/2 tsp. black pepper
• strip of lemon peel
• butter
• flour
• 2 Tbsp. mushroom ketchup *
• 1/4 pt. Port wine
• 1 possum, skinned and cleaned
• red pepper

• potatoes, peeled
• 1 pheasant, plucked and cleaned
• some veal gravy
• chestnuts, boiled and blanched
• 1 to 2 artichoke bottoms, dressed

• little butter, floured
• juice of 1/2 lemon
• 1 doz. small birds (quail, snipe, woodcock or rabbits)
• 2 qt. water

• 1 bunch parsley, minced
• 1 onion, chopped fine
• 3 whole cloves
• 1/2 lb. salt pork, diced
• 2 Tbsp. flour, browned
• butter as large as an egg
• 1 pt. potatoes, diced
• rich crust, made up
• 1 1/2 lb. lean ground beef
• 1/2 lb. lean ground pork
• 1 c. milk
• 3/4 c. bread crumbs
• 2 eggs, beaten
• 1 tsp. salt
• 1/2 tsp. pepper
• 2 Tbsp. onion, minced
• 1 tsp. prepared mustard
• 1/4 tsp. allspice
• 1/2 tsp. Worcestershire sauce

1. Beat milk and eggs together and pour over crumbs.
2. When soft, mix with meat and work together well.
3. Add spices, onion and Worcestershire sauce.
