Roasted Red Potatoes With Lemon
- 3 lbs red potatoes, quartered
- salt
- ground pepper
- 14 cup unsalted butter
- 14 cup extra virgin olive oil
- 6 tablespoons fresh lemon juice
- 2 teaspoons dried thyme
- 1 tablespoon lemon peel, grated
- 3 tablespoons parsley, minced
- Preheat the over to 375 degrees.
- Butter a large shallow oven-proof casserole dish.
- Add the potatoes and season generously with the salt and pepper.
- Melt the butter with oil in a heavy saucepan over medium heat.
- Add lemon juice, then pour over potatoes and toss well.
- Sprinkle with thyme.
- Bake for 1 hour.
- Add lemon peel and toss to coat.
- Continue baking until potatoes are tender and golden brown, about 15 minutes.
- Sprinkle potatoes with minced parsley and serve.
