Hoppin' Jason: Cannellini and Rice with Andouille Sausage

  1. In a large pot, heat the oil and bacon over medium heat.
  2. When the bacon starts to render its fat, add the sausage and cook until the bacon crisps up and the sausage turns golden, about 10 minutes.

  4. To the pan, add the onions, celery, and bell pepper.
  5. Season with a pinch of salt.

  7. Stir and cook until garlic is tender and pot is fragrant.
  8. Drain and add the soaked beans.
  9. Stir to coat the beans, then add the chicken stock, raise the heat and bring to a boil.
  10. Cover and reduce to a simmer, cook for 30 to 40 minutes, or until beans are al dente.
  11. Add the bacon, and sausage back into the pot along with the rice.
  12. Cook 30 minutes more or until rice is tender and the liquid has absorbed.
