Baked Flounder With Crab Stuffing Recipe
- 3 x -(up to)
- 4 lrg Flounders, 1 lb each Salt to taste
- 1 lb Butter
- 1 c. Crabmeat
- 2 Tbsp. Margarine
- 1 med Onion, finely minced
- 1 x Shallot, minced
- 2 x Cloves garlic, chopped
- 2 Tbsp. Celery, minced
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 Tbsp. Parsley, minced
- 1 x Egg
- 3/4 c. Bread crumbs
- 2 Tbsp. Bell pepper, minced
- Make stuffing by sauteing onion, shallot, garlic, celery and bell pepper in margarine.
- When tender, add in crabmeat, bread crumbs and seasoning.
- Bind together with egg.
- Make a slit across the back of each fish.
- Generously fill the slits with stuffing.
- Heat butter in pan; lay fish in pan being careful not to overlap.
- Place dark side of fish up.
- Bake at 375 degrees covered for about30 min.
