Robin's Whole Grain Rice Casserole

  1. In a casserole dish mix rice, cream of mushroom, and water (measure using the soup can).
  2. Add frozen broccoli and water chestnuts.
  3. Dice and add thawed chicken breasts.
  4. Stir into the casserole.
  5. Season to taste.
  6. Cover and bake for 45-60 minutes at 350F.
  7. Casserole will thicken as it cools.
  8. Cheese, breadcrumbs, or crushed cashews can be added to the top for extra flavour or crunch.
  9. Uncover, add topping, and bake for an additional 10-15 minutes.
