Mexican Corn Bread Bake Recipe
- 2 lbs. grnd beef
- 1 onion, minced
- 1 green bell pepper, minced
- 1 teaspoon salt
- 1 env. chili seasoning mix
- 1 (8 ounce.) can tomato sauce
- 1 (6 ounce.) pkg. corn muffin mix
- 1 c. evaporated lowfat milk
- 1 c. shredded sharp Cheddar cheese
- Brown grnd beef in skillet, stirring till crumbly; drain.
- Add in onion and green pepper.
- Cook for several min, stirring frequently.
- Add in salt, seasoning mix and tomato sauce.
- Spoon into baking dish.
- Spread mix of corn muffin mix and evaporated lowfat milk over grnd beef mix.
- Sprinkle with cheese.
- Bake at 400 degrees for 20 min or possibly till brown.
