shredded chicken with green chiles

  1. Heat olive oil and coarsely chop red onion.
  2. Saute red onion over medium heat until tender crisp.
  3. Add chicken and break apart chunks with spatula.
  4. Add all other ingredients, stir and bring to a boil.
  5. Lower heat and simmer ten minutes, stirring occasionally.
  6. Enjoy!
  7. Makes great burritos or taco filling.
