Seafood Primavera
- 1 c. broccoli flowerets
- 1 c. julienned carrots
- 1/2 c. chopped red pepper
- 1 3/4 c. skim milk
- 1 (8 oz.) pkg. light cream cheese, cubed (Neufchatel)
- 1/2 c. chopped scallions
- 1/2 tsp. Italian seasoning
- 1/4 tsp. garlic powder
- 1/2 c. grated Parmesan cheese (2 oz.)
- 6 oz. crabmeat (lump)
- 6 oz. shrimp, cleaned and cooked
- 6 oz. scallops, cooked
- 1 (1 lb.) pkg. fettucine
- Stir milk, Neufchatel cheese, scallions and seasonings in saucepan over low heat until smooth.
- Stir in fish and Parmesan cheese.
- Prepare fettucine according to package directions, adding broccoli, carrots and red pepper at the last 5 to 6 minutes of cooking time.
- Drain.
- Toss pasta and vegetables with sauce and fish.
- Serve immediately.
- Serves 6 to 8.
