Tofu Raita

  1. Puree tofu, oil, lemon juice, vinegar and salt in food processor until smooth.
  2. Transfer to medium bowl.
  3. Stir in cucumber, 2 Tbs.
  4. peanuts, chile, mint and cumin.
  5. Sprinkle remaining peanuts on top.
