Oven-Roasted Lime Chicken

  1. Heat oven to 425 degrees F.
  2. Combine potatoes and peppers in large bowl.
  3. Mix dressing and garlic until blended.
  4. Pour half over vegetables; toss to evenly coat.
  5. Place chicken in roasting pan sprayed with cooking spray; brush with remaining dressing mixture.
  6. Spoon vegetables around chicken.
  7. Bake 1 hour or until chicken is done (165 degrees F) and vegetables are tender, reducing oven temperature to 350 degrees F after 30 min.
  8. Transfer chicken and vegetables to platter; sprinkle with cilantro.
