Wholesome Banana Bread
- 1 1/4 c. all-purpose flour
- 1/2 c. whole wheat flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. sugar
- 1/4 c. vegetable oil
- 1 egg
- 1 c. mashed ripe bananas (about 2 medium)
- 1 tsp. vanilla
- wheat germ
- vegetable cooking spray
- Combine first 4 ingredients in a small bowl; stir well and set aside.
- Combine sugar and oil in a medium bowl.
- Beat with mixer on medium speed for 2 minutes.
- Add egg and beat until light and lemon colored.
- With mixer running at low speed, add flour mixture alternately with bananas, beginning and ending with flour mixture. Blend well after each addition.
- Stir in vanilla.
- Pour batter into 8 x 4 x 2-inch loaf pan coated with cooking spray.
- Sprinkle with wheat germ on top.
- Bake at 350u0b0 for 45 minutes, or until cake tester is clean.
- Cool 15 minutes.
- Remove from pan; let cool completely before slicing.
