Wholesome Banana Bread

  1. Combine first 4 ingredients in a small bowl; stir well and set aside.
  2. Combine sugar and oil in a medium bowl.
  3. Beat with mixer on medium speed for 2 minutes.
  4. Add egg and beat until light and lemon colored.
  5. With mixer running at low speed, add flour mixture alternately with bananas, beginning and ending with flour mixture. Blend well after each addition.
  6. Stir in vanilla.
  7. Pour batter into 8 x 4 x 2-inch loaf pan coated with cooking spray.
  8. Sprinkle with wheat germ on top.
  9. Bake at 350u0b0 for 45 minutes, or until cake tester is clean.
  10. Cool 15 minutes.
  11. Remove from pan; let cool completely before slicing.
