Cheesy Potato Skins
- 4 medium russet potatoes
- 2 cups of shredded colby monterey jack cheese
- 3 green onions, sliced
- 3 tablespoons bacon, crushed up into bits
- Scrub the potatoes in a sink and poke a couple times with a fork.
- Place in the oven for about 1 1/2 hours or until soft.
- Remove and cool to touch.
- Cut potatoes lenghwise and scoop out potato leaving a 1/4inch left on the rims.
- Top the potatoes with cheese, garnish with green onions and bacon.
- Place back in the oven and cook for an additional 5-8 minutes or until cheese is melted.
- Serve with Sour Cream if desired.
