Cheesy Potato Skins

  1. Scrub the potatoes in a sink and poke a couple times with a fork.
  2. Place in the oven for about 1 1/2 hours or until soft.
  3. Remove and cool to touch.
  4. Cut potatoes lenghwise and scoop out potato leaving a 1/4inch left on the rims.
  5. Top the potatoes with cheese, garnish with green onions and bacon.
  6. Place back in the oven and cook for an additional 5-8 minutes or until cheese is melted.
  7. Serve with Sour Cream if desired.
  8. Enjoy!
