Quinoa with Edamame and Corn

  2. Rinse quinoa.
  3. Bring the broth to a boil in a saucepan.
  4. Add quinoa and bring it back to a boil.

  6. After 10 minutes add the edamame and cook for 4 more minutes.

  8. Add the corn and cook for 1 minute more, until corn is warmed through.
  9. Remove pan from heat and put the lid on.

  11. Let it stand, covered with a lid, for about 10 minutes.

  13. Fluff the quinoa with a fork.
  14. Mix in the soy sauce, green onions, and salt and pepper.
  15. 6.
  16. Serve as a side dish or a vegetarian main dish.
