Mock Newburg Sauce With Yogurt
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup plain yogurt
- 12 teaspoon salt
- 1 egg yolk
- 14 cup dry sherry
- cayenne
- Melt butter in saucepan.
- Stir in flour until smooth.
- Remove fro heat and gradually stir in yogurt.
- Add salt.
- Heat over moderate heat until it boils, stirring constantly.
- Remove from heat.
- Stir a little of the hot mixture into the yolk and return this to the saucepan.
- Stir over very low heat for about 1 minute.
- Stir in sherry and cayenne.
- Serve with scallops, lobster or other seafood.
