Zucchini Pasta with Tomato Sauce
- 4 whole Zucchinis, Cut Into Thin Noodles With A Vegetable Slicer (4 Should Yield About 4 Cups)
- 1 Tablespoon Extra Virgin Olive Oil
- 1/2 cups Onion, Chopped
- 4 cloves Garlic, Minced
- 1- 1/2 cup Crushed Tomatoes
- 18 teaspoons Oregano
- 18 teaspoons Red Pepper Flakes
- 1 Tablespoon Basil, Chopped
- Grated Parmesan Cheese, Optional For Garnish
- Salt And Pepper, to taste
- Place zucchini noodles in a colander and sprinkle with salt.
- Set it in the sink.
- Allow the zucchini noodles to drain for 15 minutes.
- Toss and squeeze out any extra moisture.
- Set aside.
- Add oil into a large saucepan and heat over medium heat.
- Add the onion and cook for 2-3 minutes until tender.
- Add the garlic and cook for an additional minute.
- Add the crushed tomatoes, oregano and red pepper flakes.
- Bring to a light simmer and cook for 10 minutes.
- Add zucchini noodles to the sauce and cook for 2-3 minutes or until tender.
- Stir in basil and Parmesan (if using).
- Season with salt and pepper if desired.
- Serve immediately.
