Broccoli Soup
- 2 Tbsp. butter
- 3 tsp. flour
- 1/2 tsp. pepper
- 1 1/4 to 1 1/2 lb. broccoli
- 1 c. milk or half and half
- 1 medium onion, chopped
- 1/2 tsp. salt
- 1 1/2 c. chicken broth or 2 bouillon cubes, dissolved
- grated cheese
- Rinse
- broccoli.
- Trim stem ends.
- Remove flowerets and steam for
- 15
- minutes.
- (Can microwave for 8 minutes on High and
- let stand for 4 minutes, until broccoli is fork tender.) Set
- broccoli aside.
- In
- a
- large saucepan, melt butter over medium heat.
- Add onion and saute until transparent.tlend in flour,
- salt
- and pepper.
- Stir
- constantly, about 2 minutes. Gradually add broth, then broccoli; stir frequently.
- Transfer mixture
- to
- blender
- or food processor in batches and pureed. Thenteturnto saucepan and add milk or cream.
- Heat through untiltarm.
- Serve sprinkled with grated cheese.
- Serves 4 to 6.
