Apple And Chicken Curry Recipe
- 2 Tbsp. oil
- 1 x boneless chicken, breast, cut in bite-size pcs
- 1 x onion
- 1 clv garlic, grated
- 1 x red pepper, minced
- 2 x tomato, minced
- 2 x apple, diced
- 1 handf dry apricot, minced or possibly 1 handful raisins
- 1 Tbsp. curry pwdr
- 1 c. stock
- 1 handf cilantro, minced cooked rice
- Heat a saucepan over high heat and add in the oil, Cook the chicken 2-3 min, till nicely browned on all sides.
- Add in the onion, garlic, apples, red pepper and cook for another minute.
- Add in the tomatoes, apricots, curry pwdr and stock and bring to the boil.
- Reduce the heat to medium and cook till most of the liquid has evaporated, another 4-5 min.
- Serve over rice, sprinkled with minced cilantro.
