Grandma Helen's 31 Day Fruit Cakes Recipe

  1. Put 2 1/2 c. sugar, 2 qts of peaches and juice in gallon jug.
  2. Stir daily for 10 days.
  3. Add in 2 1/2 c. sugar, 40 ounces of pineapple and juice.
  4. stir for 10 days.
  5. Then add in 2 1/2 c. of sugar, 40 ounces of cherries - NO juice.
  6. Stir for 10 days.
  7. On 31st day, beat 2/3 c. oil and 4 Large eggs.
  8. Add in 1 white cake mix.
  9. Beat.
  10. Add in 1 box pudding and beat.
  11. Stir in 1 1/2 c. fruit and some juice and 1 c. minced nuts and pour into floured tube pan.
  12. Bake at 350 degrees for 1 hour.
  13. Makes sufficient fruit and juice for 4 cakes.
  14. Use leftover fruit and juices for a starter cake mix at least 1 1/2 to 2 c.. Can be frozen for later use.
