Lime Ribbon Delight
- 1 pkg. white cake mix
- 1 c. boiling water
- 1 pkg. lime gelatin
- 1/2 c. fruit juice or water
- 1/2 c. drained crushed pineapple
- 1/4 c. chopped nuts
- few drops lemon juice
- 1 c. chilled whipping cream
- 1/4 c. sugar
- Bake cake mix (per box instructions) in 9-inch layer pans. Cool.
- Pour boiling water over gelatin in bowl, stirring until gelatin is dissolved.
- Stir in fruit juice; chill until thickened but not set.
- Stir in pineapple, nuts and lemon juice.
- Place 2 strips of aluminum foil in each of the pans.
- Place the cake in the pans.
- Put gelatin mixture on the cake layers.
- Chill until firm.
- In a bowl, beat the cream cheese and sugar until stiff. With foil strips, lift cake out and stack.
- Frost sides with whipped cream.
- Refrigerate.
