Creamy Corn Casserole
- 2 large eggs
- 1/4 cup milk or soymilk
- 2 1/2 cups fresh breadcrumbs
- 1 Tbs. margarine, melted
- 1 Tbs. sugar
- 2 15-oz. cans cream-style corn
- Preheat oven to 375F.
- Lightly coat 9x9-inch baking dish with cooking spray, and set aside.
- Beat together eggs and milk; fold in breadcrumbs, margarine and sugar.
- Fold in corn.
- Season with salt and pepper.
- Pour into prepared baking dish, and bake 35 to 40 minutes, or until firm and set.
- Serve.
