Tiny Apple Cheesecakes
- 16 vanilla wafers
- 2 Tbsp. butter
- 2 c. chopped, peeled sweet apples
- 2 Tbsp. sugar
- 1 tsp. cinnamon
- 2 (8 oz.) cream cheese
- 1/2 c. plus 2 Tbsp. sugar
- 2 eggs
- 2/3 c. sour cream
- 2 Tbsp. vanilla
- Preheat oven to 325u0b0.
- Place paper liners in 16 (1/3 cup) muffin cups.
- Place a cookie in the bottom of each and set aside. In a small skillet, melt butter.
- Add apples, cook and stir until tender, about 5 minutes.
- Sprinkle with 2 tablespoons sugar and cinnamon; spoon over apples.
- With an electric mixer, beat cream cheese, eggs, sour cream, vanilla and remaining sugar until smooth. Spoon over apples.
- Bake until set, 25 to 28 minutes.
- Cool on a rack; remove cakes.
- Cover and refrigerate until cold.
- Garnish with sour cream, apple slices and crushed vanilla wafers, if desired.
