Tiny Apple Cheesecakes

  1. Preheat oven to 325u0b0.
  2. Place paper liners in 16 (1/3 cup) muffin cups.
  3. Place a cookie in the bottom of each and set aside. In a small skillet, melt butter.
  4. Add apples, cook and stir until tender, about 5 minutes.
  5. Sprinkle with 2 tablespoons sugar and cinnamon; spoon over apples.
  6. With an electric mixer, beat cream cheese, eggs, sour cream, vanilla and remaining sugar until smooth. Spoon over apples.
  7. Bake until set, 25 to 28 minutes.
  8. Cool on a rack; remove cakes.
  9. Cover and refrigerate until cold.
  10. Garnish with sour cream, apple slices and crushed vanilla wafers, if desired.
  11. Yield:
  12. 16.
