Plum Cake
- 2 1/3 c. all-purpose flour
- 2 Tbsp. fine dry bread crumbs
- 3/4 tsp. salt
- 1 c. sugar (reserve 1/4 c.)
- 1/2 c. shortening
- 2 eggs
- 2 1/2 tsp. baking powder
- 40 fresh plums (prune, Damson or Greengage), pitted and cut in half or use 2 (30 oz.) cans whole purple plums, drained and pitted
- 3/4 c. milk
- 3 Tbsp. butter, cut in pieces
- 1/4 tsp. cloves
- Combine flour, baking powder, salt and 3/4 cup sugar in a large mixing bowl.
- Add shortening, milk and eggs.
- Beat at medium speed for
- 4 minutes.
- Grease bottom and sides of an 13 x 9 x 2-inch pan.
- Coat with bread crumbs.
- Turn batter into prepared pan.
- Place plums on top, pushing one edge of each half down 1/4-inch into batter.
- Dot with butter.
- Combine remaining 1/4 cup sugar and cloves; mix well.
- Sprinkle over plums.
- Bake at 350u0b0 about 40 minutes.
