Green Tomato Pickles (Caddo) Recipe
- 2 gal. green tomatoes, quarter
- 1/2 gal. onions, minced
- 5 c. sugar
- 1/2 gal. vinegar (apple cider)
- 1/2 c. salt
- 1 c. green warm peppers, minced
- Add in salt to tomatoes and let set while chopping the rest of ingredients.
- Cut tomatoes and onions in 1/4 inch slices.
- Add in onions, sugar, green peppers to cool vinegar.
- Bring to boil, simmer a few seconds - put in jars and seal.
